Tzatziki

  • 2 8-ounce containers Greek or plain yogurt
  • 2 cucumbers, peeled, seeded, and finely chopped
  • 3 cloves garlic, peeled and minced
  • ½ teaspoon coarse salt
  • ¼ teaspoon white pepper
  • 2 tablespoons chopped fresh mint
  • 1 lemon, juiced

In a large bowl, stir together the yogurt, cucumbers, garlic, salt, pepper, and fresh mint. Add lemon juice and stir well. Cover and chill at least 2 hours before serving to allow flavors to meld.
