Tzatziki

- 2 8-ounce containers Greek or plain yogurt
- 2 cucumbers, peeled, seeded, and finely chopped
- 3 cloves garlic, peeled and minced
- ½ teaspoon coarse salt
- ¼ teaspoon white pepper
- 2 tablespoons chopped fresh mint
- 1 lemon, juiced
In a large bowl, stir together the yogurt, cucumbers, garlic, salt, pepper, and fresh mint. Add lemon juice and stir well. Cover and chill at least 2 hours before serving to allow flavors to meld.
