Honey-Molasses Chicken

  • 1 tablespoon canola oil
  • ½ cup sweet onion, peeled and diced
  • 2 large cloves garlic, peeled and minced
  • 2/3 cup ketchup
  • 1 ½ tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon molasses
  • 1 tablespoon brown sugar, packed
  • ¼ teaspoon Worcestershire sauce
  • ½ teaspoon freshly ground black pepper
  • 3-4 drops Tabasco sauce (optional)
  • 6 – 8 chicken thighs, rinsed and dried

Preheat a medium saucepan over medium-low heat, add the oil, and swirl to coat the bottom of the pan. Add the onion, saute 2 minutes until it softens, stir garlic, and saute 1 minute more.

Stir in ketchup, vinegar, honey, molasses, brown sugar, Worcestershire, black pepper, and Tabasco, if desired. Reduce the heat to low and simmer sauce 10 minutes, stirring occasionally.

Preheat oven to 350 degrees. Arrange the chicken pieces in a large baking pan, brush them generously with some of the sauce, and cover the pan with foil. Bake 45 to 55 minutes until the chicken is tender, brushing occasionally with the remaining sauce.

Yield: 6 to 8 servings
