Guacamole

- 2 large, ripe avocados, rinsed
- 2 tablespoon sweet onion, minced
- Juice of ½ lime
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon fresh cilantro, rinsed and chopped (optional)
- Tortilla chips
Slice each avocado in half lengthwise, remove the pit, and remove the avocado from the skin with a large spoon. In a medium bowl, mash avocados with a fork, and add onion, lime juice, salt, and pepper. Mix and serve with tortilla chips.
