Everyday Basmati Rice
| Christy Rost- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 cup Basmati rice
- 1 3/4 cups lowfat chicken broth
- 1/2 cup water
- 1/8 teaspoon salt
- 1 1/2 tablespoons chopped fresh parsley
Heat a medium saucepan over medium-low heat. Add olive oil and butter, swirling pan to melt butter. Stir in Basmati rice. Saute rice 2 minutes, stirring constantly.
Pour in chicken broth and water; season with salt. Raise heat to high and bring rice just to a boil. Reduce heat to low, cover, and simmer rice 15 to 20 minutes.
Add chopped parsley and fluff rice with a fork to separate grains. Serve immediately.
Recipe serves 4.
