Coconut Chocolate Chip Cookie Bars

- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar, packed
- 1 egg yolk
- ½ teaspoon vanilla
- 2 cups flour
- ¼ teaspoon salt
- 2/3 cup chocolate chips
- ½ cup sweetened flaked coconut
Preheat oven to 350 degrees. In the bowl of an electric mixer, cream the butter and sugars until light and fluffy, about 4 minutes. Add egg yolk and vanilla, and beat until the mixture is smooth.
In a medium bowl, stir together the flour and salt. Gradually add the flour mixture to the butter mixture, beating until it forms a stiff dough. Stir in chocolate chips and coconut until they are well combined.
Press the mixture into an ungreased 9x13-inch pan. Bake 28 to 30 minutes, or until the edges of the cookies are lightly browned. Remove from the oven, cool 5 minutes, and cut into 1x2-inch bars while they are hot. Cool completely on a wire rack and store cookies in an airtight container.
Yield: 32 1x2-inch cookie bars
